70% Cabernet Sauvignon and 30% Shiraz from the Azzolino vineyard, with vines 30 years old on average and heavier, dark ‘Terra Rossa‘ soils. A portion of Shiraz comes from the Hillside vineyard in the Sellicks Hill subregion of McLaren Vale.
Parcels were fermented separately in a combination of open fermenters and stainless steel pump-over tanks. Warm-to-hot ferment temperatures, combined with regular pump-overs and plunging, ensured optimum extraction whilst maintaining fruit purity. A portion of this blend was matured in a combination of new and older French oak for 9 to 18 months and the remainder left in stainless steel to maintain freshness.
Intense mulberry, plum and a hint of eucalyptus are in balance with the rich Shiraz characters. The palate has a smooth blend of Cabernet tannins, coupled with rich cherry and spice from the bolder Shiraz, and a smooth lingering finish.
