100% Sauvignon Blanc sourced from estate vineyards at Balhannah and Lenswood, complemented by fruit from a small number of highly-valued growers.
Fruit was hand-picked and arrived in pristine condition at the winery. This ensured no oxidation or skin contact resulting in less need for the use of SO2. Whole bunches were destemmed, crushed, chilled, gently pressed and then underwent cool fermentation in temperature controlled stainless steel vats. Matured on the lees for a short period and bottled early under screwcap to retain crispness.
The late, very cool, vintage has resulted in intense flavours and striking natural acidity, showing typically distinct pink grapefruit, mid-palate weight and textural interest. This wine has become known as a benchmark for Adelaide Hills, and Australian Sauvignon Blanc.
