100% Shiraz sourced from the Wyjup & Bouverie vineyards, with a small portion sourced from their oldest grower, the Charleston vineyard, all in the Great Southern region of Western Australia.
Underwent a 10 day ferment, with gentle maceration during fermentation at moderately warm temperatures and gentle slow pressing. The wine's structure was enhanced with the use of 40% new tight grain, French oak and aged for 18 months before blending, filtration and bottling.
Luscious cherry and blackberry aromas greet the nose, wrapped with chocolate and vanilla. Underlying spicy, peppery and tobacco notes abound that distinguish Shiraz from this region. A silky, textural palate with layered complexity, fine powder tannins and long berry flavours coated with lingering spicy cherry flavours.
