100% Riesling from east facing, low yielding Watervale vineyards in the Clare Valley region of South Australia.
Fruit was cool crushed and de-stemmed and only the free run juice was used. The must fermented in stainless steel tanks at 14-16°C over 2-3 weeks. The juice was inoculated with neutral yeasts and fermented to dryness. No malolactic fermentation occurred.
Delicately fragrant with appealing floral orange blossom, green apples, spice, a little pear and ginger too. A bright and lively number, with juicy fruits wrapped in taught mineral acidity. The mouthfeel is silky with appealing texture and weight.
