100% Cabernet Sauvignon hand-picked from Mount Horrocks' estate owned single vineyard in the cooler Polish Hill River sub-region of the Clare Valley, South Australia.
Fruit was fermented in stainless steel tanks and pumped over 5 times daily. A gentle pressing followed fermentation before maturation in 35% new French oak barriques for 18 months.
Plush aromas of generous red and black berry fruit with a touch of mint and anise, along with underlying gentle oak. An incredibly stylish, soulful Cabernet without any harsh tannins or green leaf characters. It's all luxurious forest fruits, bright, gentle tannins and crisp acidity. Rounded, textured, long and fine in the mouth; full of flavour.
