100% Chardonnay from the Curico Valley, Valle Central.
Fruit was hand-harvested with a portion put into tank and cold soaked at 10°c for 4 hours to enhance the aromatics. The remainder was gently crushed, settled and fermented in temperature controlled stainless steel tanks for 15-17 days. 15% of the blend underwent malolactic fermentation to impart richness and 35% of the blend was aged in 25% new French oak barrels for 8 months.
Aromas of fresh fruit, peaches and apricots with a touch of citrus. The palate is full of bananas, yellow plums and subtle asparagus. French oak lends notes of vanilla and a backdrop of butter and yoghurt. Fresh acidity and a persistent finish.
