100% Chardonnay from the Casablanca Valley, Chile‘s first cool climate region.
Grapes were cold soaked for 4 hrs at 10ºC to enhance varietal aromatics, then gently crushed and the juice settled for 24 hrs. Clear juice was fermented in one-third new French oak barrels. 30% of the blend underwent malolactic fermentation to give richness, and 40% was aged in one-third new French oak barrels for 8-10 months.
Outstanding notes of ripe tropical fruits, golden berries, bananas, peaches, apricots and grapefruit, along with the asparagus notes that are characteristic of Chardonnay from Casablanca. Elegant notes of toast and vanilla, butter and toffee are introduced by the oak ageing. The palate is fresh with pleasing acidity, medium body and a wonderful persistence.
