100% Cabernet Sauvignon from the Lopresti vineyard, and more specifically the Chinese Block, located in the Willunga district at the southern end of McLaren Vale.
Fruit is hand picked and placed onto 10kg drying crates, in temperature and humidity controlled sheds for approximately 6 weeks in the traditional Amarone manner. This results in a 30% loss in bunch weight. After drying the wine is fermented on skins for 2 weeks and left for a further 3 weeks before pressing. Then stored in 300 litre French oak barrels for 12 months before careful careful barrel selection precedes blending and bottling.
A generous, perfumed and alluring nose with a complex mix of dried spice, dark plums and cedar notes. The palate is mouth filling with lengthy tannins, bright acidity and above all abundant savoury richness.
