100% Riesling from the Springvale vineyard, the highest and coolest vineyard in the Watervale sub-region of the Clare Valley, South Australia.
Vines were hand pruned, shoot thinned and fruit thinned where necessary and inoculated with neutral yeast only to maintain focus on natural fruit characters and expression of site. Fermentation took place in temperature controlled stainless steel tanks over two weeks. There was no skin contact and only the free-run juice was used.
Attractive lime and lemon blossom aromas with an underlying chalky minerality; a supple mid-palate showing generosity, yet tight and fine, leading to an expressive finish that is vibrant, crisp and has wonderful length. Neatly balanced, minerally and delightfully dry.
