100% Chardonnay from vineyards situated in the Piccadilly Valley within the Adelaide Hills, a very cool sub-region of the Clare Valley.
Fruit was hand-picked and hand pruned, then crushed and de-stemmed. Only free run juice was used, which was chilled to 0°C for 5 days and then racked off lees. Fermentation took place in French oak barriques in temperature controlled conditions with 30-40% undergoing malolactic fermentation. 10 months maturation in oak followed, of which 50% was new. Bottled unfined and left in bottle 1 year before release.
Delicately perfumed and restrained on the nose; intense, persistent and tight in the mid-palate, with bright lively acidity. On the palate, concentrated grapefruit flavours with a hint of minerally savouriness and seamlessly integrated oak, underlying power and a crisp, clean finish.
