75% Cabernet Sauvignon and 25% Cabernet Franc from a vineyard at the highest point of the Clare Valley, South Australia.
Hand-picked fruit was crushed, de-stemmed, then fermented for 8 days in temperature controlled stainless steel tanks. Gentle plunging of the cap aided extraction of colour and tannin. Passed into 45% new French oak barriques and aged 18 months. Bottled without fining or filtering and aged a further year in bottle before release.
A remarkable blend with voluminous red berry aromatics, deep opulent blackcurrant, dark plum and redcurrant characters with hints of liquorice, chocolate and wild brambles. Has layer after layer of concentrated flavours, power and density, balanced by substantial fine-grain tannins. Complex, arresting and satisfying.
