100% Riesling grown on vines located in a narrow corridor of hard red rock in the Clare Valley, creating very distinctive characteristics.
Vines were hand-pruned, shoot-thinned and fruit-thinned where necessary. Only free run juice was used, which was racked off lees, then inoculated with neutral yeast to maintain focus on natural fruit characters and expression of place. Strong moderate temperature fermentation lasted about two weeks in tank. No oak was used. Bottled without fining.
Lemon juice and lime pith aromatics. A generosity of lime juice flavours, with a touch of sweetness on the back palate, balanced by refreshingly powerful natural acidity. Delicate and fine.
