100% Chardonnay sourced from individual barrel selections of two dry farmed northern Hawkes Bay vineyards in Bay View.
Individual grape parcels were hand-harvested and whole cluster pressed. Only low juice yields were taken. The lightly settled juice was run off to barrel for fermentation with indigenous yeasts. Some barrels were allowed to undergo malolactic fermentation to naturally soften the acidity. The finished wine was left on lees till bottling with occasional lees stirring.
Full-bodied with vineyard-derived complexity and elegance. Made with a ‘hands off’ approach, it is food friendly and age-worthy and vividly exhibits the peach notes and grapefruit notes typical of Bay View Chardonnay. Subtle oak and lees-derived complexity from barrel ageing add further interest.
