100% Chardonnay from the Three Oaks Vineyard located in the Geelong winegrowing region of Victoria.
Hand-picked fruit is whole-bunch pressed in the winery. All solids are chilled before being put to barrel, 30% new French oak. Natural fermentation occurs at cool temperatures over 1-2 months, then a small amount of stirring helps start malolactic fermentation. Racked, fined and lightly filtered before bottling after 11 months.
Trademark understated power and length with a mineral finish. This wine has a great fruit expression that is well integrated with French oak. The soil characteristics come through, and the palate is fine but firm with great acidity, texture and length. Rich in flavour, yet very refined.
